Prepare Potatoes and onions by thinly slicing. Use a mandolin!
Stack the potato slices and onions in little piles and then stand them on their sides in your casserole dish. Sprinkle with Prime Rub
Make the cheese sauce as per below with flour and butter. Add in a little milk to make a white sauce add Smoked Garlic, chopped chives and finally lots of cheese.
Bake Au Gratin for about 90 minutes.

Ingredients:
2 1/2 Pounds Yukon Potatoes
1 Onion
2 TBSP butter
2TBSP flour
1 TSO dry mustard powder
2 Cups Milk
1/2 Cup Smoked Cheese ( or any White Cheddar )
1/2 Cup Cheddar Cheese
1/2 Gruyere Cheese
1 TBSP Smoked Garlic
2 TBSP Prime Rub
1/4 Cup Chopped Chives
Preheat oven to 400F
1.Slice potatoes into 1/8 thin slices. Slice onion as thin as possible
2.Layer potatoes and onions in little stacks. Place upright in greased casserole dish.
Melt butter and flour in a saucepan cook 2-3 minutes. Add Smoked Garlic, Chives and milk. Whisk over medium heat until thick and bubbly. Remove from heat and stir in cheeses until melted.
3.Spoon cheese sauce over potatoes. Cover with foil (sprayed with cooking oil or rubbed with oil) and bake 60 minutes.

Remove foil and bake an additional 20-30 minutes or until lightly browned and potatoes are cooked.
